Quick Chicken Stir-Fry
Serving Size : 4
Amount Measure Ingredient -- Preparation Method

2 tablespoons oil
3 Boneless skinless chicken breast halves
1 Garlic clove -- minced
1 cup broccoli flowerets
1 cup red pepper strips
1 cup carrot slices
1/4 cup sliced green onions
1/2 cup Miracle Whip
1 tablespoon soy sauce
1/2 teaspoon ground ginger
Heat oil in skillet over high heat.
Cut chicken into strips, add to skillet with garlic; stir-fry 3 minutes.
Add vegetables; stir-fry an additional 3 minutes.
Reduce heat to medium; stir in Miracle Whip, soy sauce and ginger.
Simmer 1 minute.
Serve over rice.

Most people think that most cases of food poisoning are contracted by eating at a restaurant that is unsanitary. The fact is that most cases of food borne illness occur from food that is prepared at home! Because an illness can take up to 72 hours to present itself it is easy to think that you got it from eating out. But the truth is that most restaurants have very high sanitary standards. Restaurants are required by law to have at least one employee that is SafeServ certified by the state. The local Health Department also inspects them often. Also, a restaurant can not afford even ONE person getting sick. Just a rumor can close a restaurant down fast!
Cross contamination is the #1 cause of food borne illness occurring in the home. One of the best ways to prevent it is to use paper towels in place of the kitchen dishtowel!
